Fennel Macarons with Vanilla Fennel Candy Buttercream Filling – Fennel Candy Favors Series – Recipe No. 4

Fennel Macarons with Vanilla Fennel Candy Buttercream filling are unusual and flavorful beauties with mouth full of crunch.  They will make a gourmet colorful addition to any candy or dessert buffet and a particularly unique treats for Indian Wedding favors or candy buffet.

Recipe
For the Fennel Shells:
Ingredients:

  • 3 egg whites – aged at least 2 days. Let them sit out on the counter uncovered.
  • 25 grams of fine granulated sugar
  • 200 grams of powdered sugar (minus 2 tablespoons)
  • 2 tablespoons Fennel powder
  • 110 Grams of almond flour*

*You can buy almond flour that has been ground with or without the skin. The former looks really nice if you are not coloring the shells. You can also grind your own almond flour by putting whole or sliced almonds in a food processor or blender. If you do, make sure you throw a little of the powdered sugar in to prevent the almonds from forming a paste.
Directions:

  • Sift the powdered sugar, fennel powder and almond flour together or pulse them together briefly in a food processor. Make sure there are no large pieces and set aside. 
  • Whip the egg whites. When they start to get foamy, slowly add the sugar. Continue whipping until you can turn the bowl upside down and nothing slides out. (I also add a pinch each of salt and cream of tartar)
  • Add the powdered sugar/almond/fennel powder mixture to the egg white mixture and fold, using quick strokes at first then slow down.  No more than 50 strokes all together. The batter should have a “flowing like lava” consistency. 
  • Fill a Pastry bag and pipe circles onto a baking sheet lined with parchment paper or on a Silpat. 
  • Let the macaroons dry for about one hour until they harden.
  • Preheat oven to 300 degrees F
  • Bake for 18-20 minutes.
  • I keep the oven door propped open with a dish towel or wooden spoon. Try to refrain from obsessive peeping to see if they get feet. 
  • Let cool completely and then match up the shells into pairs according to size and fill with the buttercream.

For the Vanilla Fennel Candy Buttercream:
Ingredients:

  • 1/4 stick butter room temperature
  • 1/8 cup milk
  • 1 teaspoon vanilla extract
  • 2-3 cups powdered sugar
  • 1/3 cup candy coated fennel
  • Orange food coloring (optional)

Directions:

  • Beat the butter and milk together with one cup of the powdered sugar.
  • Add the remaining powdered sugar one cup at a time.
  • Add food coloring if desired.
  •  Spoon the frosting in to a pastry bag fitted with a round tip. Stand it up in a tall glass and fill the bag.
  • Pipe the filling onto one macaron shell and sandwich together with the other.
  • Gently roll the macaron in the fennel candy.

Anise and Fennel Candy Ice Cream – Fennel Candy Series Recipe No.3

 

This is a sweet dessert idea for a warm summer wedding party.  Create an exotic and unique wedding desert for that will leave your guests with delectable memories of your wedding. 

Anise and Fennel Candy Ice Cream 

2 cups whole milk
1 tablespoon plus 1 teaspoon corn starch
1 1/2 ounces cream cheese, softened
1/4 teaspoon fine sea salt
1 1/4 cups heavy cream
2/3 cup sugar
2 tablespoons light corn syrup
6 whole star anise, plus additional for garnish
1/2 cup candied fennel seeds, plus more for sprinkling on top

Whisk a small amount of the milk, about two tablespoons with the cornstarch. Set aside. Blend the cream cheese and salt in a medium bowl until smooth.

 Fill a large bowl with ice water.

Combine the remaining milk, cream, sugar, corn syrup, and star anise in a medium saucepan over medium high heat. Bring to a rolling boil and allow to boil for 4 minutes. Remove from the heat and slowly drizzle in the cornstarch mixture, whisking constantly. Bring the mixture back to boiling and let boil until thickened, 1-2 minutes. Whisk the hot milk into the cream cheese until smooth. Place the bowl in the bowl of icewater, making sure the water does not come over the edges.

Let stand about 30 minutes until cold. Cover and refrigerate overnight, or about 8 hours.

Remove Star Anise, you may want to strain the mixture if any small pieces have broken off.

Freeze as directed for your ice cream maker. Allow mixture to become thick and creamy. Pack the ice cream into a storage container, mixing in the fennel candy as you go. Fill the container so the ice cream touches the top of the lid, or put a piece of parchment paper over the top of the ice cream. Allow to freeze for at least four hours before serving.

 Garnish with a whole star anise and sprinkle with additional fennel candy to serve.

Fennel Cake with Chocolate Fennel Ganache – Fennel Candy Series Recipe No.2

This is a decadent dessert that will impress your wedding guests.  Fennel Cake with Chocolate Fennel Ganache will make a delectable addition to your wedding dessert buffet and a modern dessert addition with an exotic touch to your Indian Wedding Sweets and Dessert Buffet.

Fennel Cake with Chocolate Fennel Ganache Recipe

3 cups cake flour
1 cup sugar
1 cup butter
3 eggs1 tsp. salt
2 ½ tsp. baking powder
1 tsp. vanilla1 cup whole milk
2 Tbsp. fennel seeds, ground
½-1 tsp. anise extract
Candy-Coated Fennel Seeds (optional for garnish)
Chocolate Fennel Ganache (recipe below)
     

Preheat oven to 350 degrees. Butter and line two 8-inch cake pans. Whisk together flour, baking powder, salt, ground fennel in a mixing bowl; set aside. With an electric mixer, cream butter and sugar until light and fluffy. Add eggs, one at a time, being sure to scrape side of bowl with a spatula after each addition. Add vanilla. Alternately add flour mixture and milk, beginning and ending with flour. Beat on medium speed until a thick cake-like batter appears. Evenly divide batter into the prepared pan. Do not overfill. Bake for 20 to 25 minutes, rotate, and cook another 10-15 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pans then remove and place on wire racks to cool completely.

 

Chocolate Fennel Ganache
8 oz. bittersweet or semisweet chocolate, finely chopped
1 cup heavy cream; more as needed
1 ½ Tbsp. unsalted butter
1 ½ Tbsp. ground fennel seeds     

Put the chocolate in a medium heatproof bowl. In a small saucepan, bring the cream to a boil. Pour the hot cream over the chocolate and whisk gently until the chocolate is completely melted and smooth. Refrigerate to cool, and allow the fennel flavor to incorporate into the chocolate. Makes about 1 ½ cups.

Sweet Fennel Lollipop – Fennel Candy Series Recipe No. 1

The most talked about is the Sweet Fennel Lollipops that we featured.  If you’re thinking of gourmet lollipops or cake pops as wedding favors, then these pretty lollipops will be an unique twist.  Especially if you are having an Indian Wedding, then why not have Indian themed lollipop favors.  This Sweet Fennel Lollipop is the creation of British Indian Chef, Vineet Bhatia.
Here is his recipe for a DIY favor idea that will heighten the taste palette:
Ingredients
50g (1/4 cup) of unsalted butter
50g (1/4 cup) of icing sugar (powdered sugar)
 1 egg white
50g (1/4 cup) of plain flour
40g (1.4 oz) of ground almonds
3 tbsp of sugar coated fennel seeds (fennel candy)

Method
1. Beat the butter and icing sugar together until pale and creamy, then mix in the egg white a little at a time. Fold in the plain flour and ground almonds
 2. Put 10 spoonfuls of the mixture on a baking sheet lined with a non-stick baking mat or a sheet of baking parchment, spacing them well apart
3. Sprinkle the sweet fennel seeds on them. Place a cocktail stick within each spoonful of the mixture
 4. Bake in an oven preheated to 180°C/Gas mark 4 for 3-4 minutes, until the tuiles are light
Tip: Leave the Sticks out and serve them as sugary tuiles cookies.
This is an easy DIY recipe and our suggestion is to cello wrap the pops and embellish with personalized favor tags.

Indian Wedding Cookie Favors

Gourmet cookies are very popular as wedding favors, however what if you want designer cookie wedding favors that fit into your traditional Indian Wedding? 

 

 

Create your own designer wedding cookie favors using some henna artist techniques!

Show any of these beautiful designs to your custom cookie maker and they should be able to come up with your perfect Gourmet Indian Wedding Cookie Favor.  However, if you like to bake and want to give something homemade, then these cookies can be a DIY project as well.  If you are have a mehndi artist, a bag of icing is very similar to a bag of mehndi that they use.  The easy way to make these cookies is to use your favorite sugar cookie recipe or a your favorite store bought package of frozen sugar cookie dough.  Roll the dough out and cut out paisleys and use a flower cookie cutter for a flower shape.  You can use a heart shaped cookie cutter or any simple cookie cutter as well because the key to these cookies is the decorations that will bring them the ethnic flair.  Bake your cookies according to recipe or directions then decorate using multicolored cookie icing in bags or get your mehndi artist to do their magic on these cookies.

 

Once your icing is set and your cookies are complete you can package them in cellophane bags with personalized wedding favor tags for presentation.
